Prawn Dumplings

Ingredients

300g Green Prawns peeled and deveined
2 x Shallots chopped
1/2 bunch Spring Onions chopped
1/2 bunch Coriander fresh chopped
3cm piece of fresh Ginger grated
Garlic cloves x 2 chopped
1 tablespoon Soy Sauce
1 tablespoon Fish Sauce
Juice from 1 x Lemon or Lime juice
Packet of Wonton or Gow Gee Wrappers (from Asian store or some supermarkets)

Method
Place all ingredients except wrappers into blender and process until combined but still lumpy (you don't want it turning into a paste). 
Lay out the wrappers and place a teaspoonful of mixture onto each. 
Moisten edges with some water and fold over to enclose. Repeat for remainder wrappers and filling.
Bring the edges together and squeeze to join. 
Steam the dumplings for about 10 - 15 minutes until cooked through. 
Serve with some extra soy sauce and chopped fresh chillies.

The uncooked dumplings can be frozen until required. Cooking time will be longer if steamed from frozen.
