Bean And Lentil Madras

This is a vegetarian Madras which has a delicious sauce that is smooth and full of flavour. This is one of my own creations.

Bean And Lentil Madras

Ingredients

2 large onions
1 can brown lentils
1 can red kidney beans
1tsp ground cumin
1tsp ground coriander
1tsp ground turmeric
1tsp chilli powder
1/2 tsp ground ginger
1 tbsp minced garlic
1 Tbs tomato paste
water
coconut milk/cream

Method

Fry onion, add spices, ginger and garlic and fry until aromatic about 2 minutes.
Add tomatoes paste, fry 1 minute, add lentils and beans and some water to cover, simmer for 30 minutes, stirring occasionally. When cooked add some coconut milk or cream to taste.
